Ericka's Asian Salmon
Large side filet of salmon
1-2 shallots, thinly sliced
1-2 lemons, sliced into wheels
1-2 Tbsp fresh grated ginger
Preheat the oven to 350 degrees. In a large baking dish, pour the teriyaki and soy sauce into the bottom to coat, about 1-2 Tbsp each. Place salmon into dish. Place sliced shallots, grated ginger and lemon wheels onto salmon to create a very thin layer. Pour about 1-2 Tbsp each more teriyaki and soy sauce over the salmon.
Bake in oven, uncovered for 20 minutes, basting in juices halfway through. If your filet is thinner, be sure to cut back on the cooking time by a couple of minutes.

This is a recipe that my dearest friend Ericka made for my family and me while visiting us in California. It was a real hit and super easy! This recipe doesn't have exact amounts, as you just adjust to the amount you are cooking. I will give you the amounts I usually use.
