Escabeche of Sweet Peppers
1 large onion sliced
3 red bell peppers sliced
6 garlics cloves minced
dash of olive oil
3 bay leaves
1 teaspoon fresh oregano chopped
1 cup apple cider vinegar
Sauté everything in large pan with oil.
Add bay leaves and crushed oregano and salt
Add vinegar, turn of flame and let rest or 5 minutes with cover.
When cool transfer to a jar. ???? cool
