3 Egg yolks
1 Cup milk
1/3 Cup sugar
2 Tablespoons freshly ground espresso
In a mixing bowl, beat the egg yolks until frothy. In a small saucepan, bring the milk and sugar to a boil then pour over the eggs and blend. Return this mixture to the saucepan and cook over medium heat without allowing to boil. Stir until the mixture is thick enough to coat the back of a spoon. Remove from the heat, add the espresso beans and let rest 10 minutes. Strain through a sieve or cheesecloth.
