Why I Love This Recipe

I ordered baked potato soup at a restaurant once and my wonderful husband had a taste. He think looked at me, winked, and said "You could make it better"....so I did.


Ingredients You'll Need

4 large baking potatoes
2/3 cup butter
2/3 cup flour
6 cups milk
4 green onions; chopped
1 cup sour cream
2-3 cups crisply cooked bacon; crumpled
2 cups shredded cheddar cheese
Salt and pepper, to your liking


Directions

Heat oven to 350 degrees


Bake potatoes until tender; about an hour


Melt butter in saucepan


Slowly blend in flour with a whisk


Gradually add milk and salt and pepper


Simmer over low heat


Cut potatoes in half, scoop out insides and set aside


Chop 1/2 of the peels


When milk is hot, whisk in potatoes


Add onions and peels


Stir well and add sour cream and 1/2 of the bacon


Heat thoroughly, add cheese a bit at a time


Serve with remaining bacon on top
