Evie's Pork Chop Spanish Rice

Serves 5 | Prep Time 20 | Cook Time 40

Ingredients

5 pork chops; boneless
1 Tablespoon vegetable oil
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon chili powder
1/2 cup chopped onion
1/2 cup chopped bell pepper
12 ounce can tomatoes
5 bell pepper rings
2 ounces cheddar cheese
2 cups prepared rice


Combine salt, chili powder, and pepper; set aside.


Heat oil over medium heat and brown pork chops.


Sprinkle salt mixture over meat.


Add rice, onion, and bell pepper.


Pour tomatoes over pork chops.


Cover and simmer 35 minutes; stirring occasionally.


Top with bell pepper rings and cook 5 minutes.


Top with cheese.
