1 cup low-fat shredded cheddar cheese or Farmer's cheese, divided
2-1/2 cups cooked brown rice
3/4 cup low-fat cottage cheese (1%)
1 2 ounce jar pimientos, drained and chopped
1/2 cup fat-free milk
1 large tomato, peeled and diced
Preheat oven to 350° Combine 1/2 cup of cheddar cheese and all other ingredients except paprika. Stir until well mixed. Pour in mixture; top with remaining cheddar cheese and sprinkle well with paprika. Bake 25-30 minutes.
