2 tablespoons graham cracker crumbs
4 pkgs. (8 oz. each) softened cream cheese
1 cup sugar
1 teaspoon lemon juice
1/2 teaspoon vanilla
1/4 teaspoon lemon rind
Sprinkle bottom of lightly greased 9-inch springform pan with graham cracker crumbs. Combine cheese and sugar in blender at medium speed until well mixed. Add eggs, one at a time, mixing well after each addition. Blend in juice, vanilla and rind. Pour into the springform pan and bake at 325ºF for 50 minutes. Loosen cake from rim of pan. Cool before removing the rim. Arrange fruit on top of cake.
