1/2 cup of Pecorino Romano or grated parmesan cheese
1/2 cup of heavy cream
Leftover vegetables, whatever you have in fridge, but red peppers are a great item to add to this
Bacon or prosciutto or ham or bulk sausage
Leftover roasted potatoes
Salt & Pepper to taste
If you are using prosciutto or bacon, cut into small pieces, cook till crisp (I cook the bacon in the oven less mess!!!) and add to recipe before cooking.
Heat 2 tablespoons of olive oil in a Cast iron (or ovenproof skillet)
(if adding bulk sausage, add here, and fry till browned and use just 1 tablespoon of olive oil to coat bottom of pan).
Preheat oven to 425 and then drop to 350 degrees when you put skillet into oven
Scramble 8 eggs
Add all above ingredients
Pour into pan
Don't touch for a few minutes until you see the sides bubble up
use spatula to ensure all egg mixture is being"cooked"
once it looks like it is setting a bit (about 5 minutes)
place into oven and cook until set in the middle -- check after 20 minutes
but likely it will take up to 30 minutes (depending on size of skillet)

I don't know about you, but I have a couple of small containers of "leftover" vegetables in the fridge; asparagus, spinach, broccoli; zucchini; along with small pieces of hard cheese -- what do do??
Create a Frittata (the Italian word for fry is Friggere" And others loosely translate Frittata to mean "a bit of a mess"
Either way, it's a great way to use your leftover cheese/hams/vegetables in the fridge!
Serve with crusty Italian bread and a nice green salad!
