Fajita Chicken and Peppers
2 Tbsp. butter
1 lb. boneless, skinless chicken breast strips
2 1/2 tsp. fajita seasoning
1/4 tsp. salt
16-oz. bag frozen pepper stir-fry
1 cup frozen corn
1 Tbsp. fresh cilantro, chopped
Melt 2 Tbsp. butter in a large skillet over medium-high heat until sizzling.
2. Add 1 lb. boneless, skinless chicken breast strips, 2 1/2 tsp. fajita seasoning and 1/4 tsp. salt; cook, stirring occasionally, until chicken is no longer pink, about 5 to 6 minutes.
3. Stir in half a 16-oz. bag frozen pepper stir-fry and 1 cup frozen corn.
4. Continue cooking, stirring occasionally, until veggies are tender and chicken is golden brown.
5. Toss in 1 Tbsp. chopped fresh cilantro and serve with tortillas, if you like.
