Faki Salata (Lentil Salad)
1cup dried lentils , picked over
½ cup crumbled feta cheese
3tablespoons extra virgin olive oil
2tablespoons balsamic vinegar
1cup cherry tomatoes halved
½ cup chopped parsley
2-3 green onions finely chopped
salt & pepper to taste

Step 1 :Rinse lentils and place in a large saucepan.
Step 2 :Cover with cold water, bring to a boil, lower heat to a simmer and cook lentils until soft (approximately 30 minutes), drain and set aside to cool.
Step 3 :When lentils have cooled, toss together with the remaining ingredients and place in refrigerator for approximately 30 minutes to chill.
Step 4 :Enjoy!
