Why I Love This Recipe
This recipe is perfect when you're trying to be healthy, but don't have a lot of time to cook. My fiance and I used to make this when we were both working full time AND in the middle of our master's program.
Ingredients You'll Need
1- 2 Avocado
1- 2 Bell Pepper
Trader Joe's Fully Cooked Falafel
1- 2 Potatoes
Trader Joe's Eggplant Hummus
Trader Joe's Everything But The Bagel seasoning
Cook Trader Joe's Fully Cooked Falafel according to package (in microwave, or in oven).
Chop and pan fry (or roast) potatoes with salt and pepper.
Chop up the avocado, bell pepper, and tomato.
Throw everything on to a bed of arugula and lettuce.
Top with a dollop of Trader Joe's eggplant hummus and a shake of Trader Joe's Everything But The Bagel seasoning (this stuff is like crack).
Toss and enjoy!
