1 cup graham cracker crumbs
1 tablespoon sugar
1/2 teaspoon cinnamon
1 tablespoon butter, melted
5 pkgs. (8 oz. each) cream cheese
1-3/4 cups sugar
3 tablespoons flour
1-1/2 teaspoons grated orange rind
2 egg yolks
1/4 cup milk
Preheat oven to 475ºF. Lightly grease a 9-inch springform pan.
Crust: Combine first 3 ingredients and blend in melted butter. Press firmly over bottom of pan. Chill briefly before filling.
Filling: Let cheese soften in large bowl; blend in sugar, flour and rind. Beat with electric mixer until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition. Stir in milk and pour into crumb crust.
Bake at 475ºF for 10 minutes. Reduce oven temperature to 200ºF and bake 1 hour. Let cool in oven another hour; remove and cool on wire rack.
