FANCY DATE NUT BREAD

Ingredients

  • 1 lb. dates, cut up
  • 1 lb. walnuts
  • 1 lb. Brazil nuts
  • 4 eggs, separated
  • 1¼ cups flour
  • 1/3 tsp. salt
  • 2 tsp. baking powder

Directions

  • Mix together dates and nuts (try substituting pecans for half of the Brazil nuts). Beat 4 egg yolks. Mix well with nuts and dates. Sift together flour, salt, and baking powder. Add to nut mixture. Beat 4 egg whites until stiff (holds peaks-do not overbeat). Gently fold into nut mixture. Fit into 5"x9" bread ban or 7½"x3½"x2¼" pans or 4+ 4½"x2½"x1½" pans. Bake at 250° for 1 hour 15 minutes. Make great hostess or holiday gifts.
