- 3 slices bacon
- 1/2 c chopped onion
- 3 c raw cauliflower rice (just shred raw cal in food processor)
- 1 pint. stewed tomatoes OR 2 c canned tom +green and red pepper chopped
- 1 t Paprika
- garlic salt + pepper to taste
- Brown bacon till crisp and leave in pan - add onions cook till trans- add "rice" and cook about 2 min. add stewed tomatoes and spices - put in 350 deg. oven - UNCOVERED for 2 hrs -you totally cannot tell the difference from real rice!!!
NotesSpanish Rice knock off made with cauliflower for those who are low carbing...its a great sub for rice. You wont miss it!
