- 1 Loaf French Bread Cubed (I have also used Italian and day old homemade wheat bread)
- 2-3 Large Fresh Tomatoes, Cubed (in the winter months I often use cherry or grape tomatoes sliced in half)
- Chopped Celery
- Thinly sliced Red Onion
- Chopped Fresh Parsley
- Olive Oil
- Fresh Gound Pepper and Sea Salt
- Shaved Pecorino Romano
- Place cubed bread on a cookie sheet and toast in oven for apx 10 min at 350, you want them slightly toasted. Cool. Place in a large serving bowl. When ready to serve add tomatoes, celery, onion and parsley. Toss. Drizzle with a good quality olive oil, season with fresh ground pepper and sea salt. Top with Shaved Pecorino Romano and serve.
