Feta, Tomato and Red Onion Salad
5 ounces feta cheese, crumbled (1 1/4 cups)
4 large ripe tomatoes cut into 1/2-inch pieces
1 medium red onion, finely chopped
1 large jalapeÃƒÂ±o, seeded and thinly sliced
2 tablespoons minced flat-leaf parsley
3 tablespoons extra-virgin olive oil
In a large bowl, gently toss the feta cheese with the tomatoes, onion, jalapeÃƒÂ±o and minced parsley. Drizzle the olive oil over the salad, season with salt and toss until coated. Serve the salad at room temperature.
