FIG PRESERVES

Ingredients

  • 2 qts. figs. w/stems
  • 1 lemon , sliced
  • 1-1/2 cup sugar
  • 1-1/2 cup water
  • soda

Directions

  • Rinse figs & drain, cover w/ soda
  • the sink, then cover w/
  • boiling water & let stand 5
  • minutes.
  • Remove figs & rinse, cut off
  • stems.Make a syrup of the water
  • sugar. Cook until sugar is well
  • melted, stir. Add figs & Sliced
  • lemon. Cook slowly until clear,
  • about 1- hr
