This recipe actually came from having leftovers in my fridge. It was a Sunday afternoon and I didn't want to go out to eat. I looked through my fridge and had plenty of left over meals that didn't quite pair well together as is. So I came up with quesadilla. I hope you enjoy this recipe. I know I had fun making these delicious fish quesadillas.
Ingredients You'll Need
Tortilla: 4
Fish: your choice grilled seasoned to test
Cheese optional but good to be used as the glue. Your choice.
Spinach, rinsed and dried
Mushrooms: 1 cup, roughly chopped or grumbled with hands
Garlic: two cloves minced
Onion: your choice of type, finely chopped half cup
Green pepper: small or half cup, finely chopped
Directions
Sauté: mushrooms, garlic, onion, green peppers, Your choice of oil or butter (grape seed oil)
Once all sauté pour half cup of water let steam rise and then cover top of veggies with spinach. Let steam until spinach begins to wither. Mixed all veggies together put to the side.
Build quesadillas
High heat to heat pan after pan heated medium and begin to build
Grease pan
Slap Tortilla on pan
Sauté Veggies one side of the tortilla
Grilled fish on top
Cheese ( holds tortilla to filling inside aka glue)
Fold tortilla
Press down with spatula wait about 30sec
Flip press down 30sec
Place on plate, slice then serve
