Fitnah's skirt steak with jalapeno and tomato
1 shallot, diced
2 medium onions, sliced
3 fresh garlic cloves (lots of it) .. i use 3-5 cloves, crushed
1 can tomatoes (16 oz)
1 can tomato sauce (6 oz)
3 Jalapeno or Serano peppers (i use like 3, but i like it hot) diced
1 tsp cumin
1 tsp coriander (ground)
1/4 tsp ginger paste, about 1/4 tsp
chili powder to taste
olive oil, 3 tbsp
use an electric skillet for this, but it can be done on the stove, too. use a huge, deep pan.
Brown the onions, shallots and garlic in 3 tbsp olive oil over a medium heat, crank it up and throw in the skirt steaks , salt and pepper them and add the other spices and make them sizzle. turn them when browned on one side, brown the other than turn the heat down to low or simmer and add the ginger paste.
Stir for like a minute and then add the rest of the ingredients.
Simmer about 20 to 30 minutes and serve either over yellow rice or whole wheat rigatoni.
