Five Bean Casserole

Ingredients

1/4 pound fava bean
1/4 pound pinto bean
1/4 pound white bean
1/4 pound lentils
1/4 pound red beans
2 vegetable bouillon cubes
1 red bell pepper diced
2 carrots diced
6 roma tomatoes chopped
2 sprigs fresh thyme
1 large onion chopped
6 garlic cloves minced
dash of olive oil
salt to taste
bunch of parsley chopped


In large pot boil beans in water to cover 3 inches.


Add bouillons and cook for 1 hour.


Add bell peppers, carrots, tomatoes and sprigs of thyme to the pot.


In pan saute onion and garlic with oil and add to pot and cook 1 more hour or until all beans are soft.


Remove sprigs of thyme, salt to taste and add parsley.
