Florentine Simmered Rice
1 3/4 cup chicken broth
1 tsp dried Italian seasoning
1 cup chopped spinach
3/4 cup regular long-grain white rice
1/2 cup grated Parmesan cheese
Heat broth and Italian seasoning in a saucepan over medium-high heat. Heat to a boil.
Stir in spinach and rice. Reduce heat to low. Cover and cook 20 minutes or until rice is tender. Stir in cheese before serving. Serve with additional cheese, if desired.
