Florentine Simmered Rice

Ingredients

1 3/4 cup chicken broth
1 tsp dried Italian seasoning
1 cup chopped spinach
3/4 cup regular long-grain white rice
1/2 cup grated Parmesan cheese


Heat broth and Italian seasoning in a saucepan over medium-high heat. Heat to a boil.


Stir in spinach and rice. Reduce heat to low. Cover and cook 20 minutes or until rice is tender. Stir in cheese before serving. Serve with additional cheese, if desired.

This was good - and really easy! When it was done, I dumped a bunch more spinach in and let it wilt into the rice on top of the stove. Then we dumped more parmesan cheese on top. Delish! Thanks for posting this recipe. Molly
