Floyd's Orange-cherry- Coconut Cake Icing
Two 8 Oz. packages of Cream Cheese
2/3 Cup of the buttery flavored, low fat margarine
2 lbs. of powdered sugar (may need some more to make thick enough to spread easily)
2 Tbsp. of the frozen orange concentrate
These two items for the icing will not actually go into the icing itself:
Toasted coconut set aside for the icing.
Diced Oranges and Cherries left over from above (the 1/3 left for the icing)
While the cake is baking, put the cream cheese and the margarine into a large bowl, mix together, then soften in the microwave for about 30 seconds. Add the powdered sugar and the orange concentrate and stir till the icing is thick enough to spread easily. You may add powdered sugar if not thick enough to spread easily.
