Why I Love This Recipe
Ingredients You'll Need
Some chicken cut into cubes, like two breasts or so
1 cup of rice--half wild rice and half regular white rice
1 2/3 c. evaporated milk
1/2 c. chicken broth
1/4 c. butter
1/4 c. flour
Mushrooms (about 4, sliced)
1/4 of an onion, chopped small
Two big pinches of rosemary
Salt and pepper to taste
Boil the chicken cubes and cook the rice while you sautee the mushrooms and onions together.
Then cook the butter and flour together into a paste (or a roux, but that might not be spelled right).
Add the liquid bits to the roux to make the saucey stuff that sticks the casserole together. Stir in
the rice, mushrooms and onions, pecans, cranberries and chicken. Add the rosemary, salt and
pepper. Bake that shit at 350 for about half an hour (uncovered). EAT!
