BackstoryI just got home from a family fish fry and visiting with about 40 family members and much talk of quilting and cooking!! This is one of the many my Great Aunt Fran shared with me.
- 8 yellow squash, sliced thin
- 1/2 cup water
- 1/2 stick butter
- salt & pepper
- 1 box stuffing mix
- 2 cans cream of chicken soup
- 2 can of chicken broth
- Boil squash in water with butter, salt and pepper til tender. Pour ina 13 x9 dish. Top with dry stuffing mix. Mix soup and broth and pour over stuffing. Bake at 35o degrees for 45-60 minutes or til lightly browned.
