Freezer Burritos

Ingredients

1/3 Cups brown rice
2/3 Cups vegetable broth
7.25 Ounces canned diced tomatoes, juice and all
1/2 Cups onion, diced
1 Teaspoons garlic, diced fine
1/2 Tablespoons taco seasoning
1/3 Cup rice
17.25 Ounce can of black beans
1 7.25 Ounces can refried beans
¼ Cup corn
1/2 Cups cheese, shredded
1/2 Tablespoons hot sauce
8-6 Inch tortillas


Place rice, vegetable broth, tomatoes, onion, garlic and taco seasoning in a pan of boiling water and cook until water is absorbed and warm tortillas in the microwave with a damp towel to make rolling easier. Spread salsa yogurt mix onto tortillas and then layer on remaining toppings. Fold into burritos and wrap individually in foil sheets. Bake in oven at 325 degrees F for 15 minutes.
