French Coconut Pie

Why I Love This Recipe


Ingredients You'll Need

3 eggs, beaten
1 1/2 cups sugar
1 cup milk
1/2 cup butter, melted
1 TB flour
1 tsp vanilla extract
1 tsp vinegar (I use apple cider vinegar.)
1 cup shredded coconut
1 unbaked pie shell (9 inches)


Directions

Preheat oven to 400


Combine all ingredients in one large mixing bowl. Pour into the pie shell, and bake at 400 degrees for 10 minutes.


Then reduce heat to 325 degrees, and bake for 40 minutes (or until the top is golden and the center is almost set-- stick a blunt lightly into the center to test.)


Store cooled pie in the refrigerator.
