French Onion Soup
4 cups sweet onion, vertically sliced
4 cups red onion, verticall sliced
2 tsp olive oil
1/4 cup white wine
8 cups beef broth
1/2 tsp fresh thyme
Heat olive oil over medium-high heat. Add onions and saute for 5 minutes. Add white wine simmer for 20 minutes. Add beef broth and bring to a boil. Reduce heat and simmer for 2 hours.
Preheat boiler, cube french bread and place under broiler until toasted. Pour soup into broiler-proof bowls, add cubed bread, and top with a slice of swiss cheese. Place under boiler until cheese is melted.
