Why I Love This Recipe
This is Uncle Kelly's favorite soup. This recipe is adapted from the Baldwin Family Cookbook published in 1986.
Ingredients You'll Need
4 Tablespoons of Butter
Lots of Onions
3 cans of condensed Campbell's Beef Broth
3 cups of water
3 whole peppercorns
1 large baguette
swiss cheese
Directions
Halve the onions and slice them so they are in circles.
Saute butter and onions until soft but not brown.
Add broth, water and peppercorns.
Bring to boil and simmer 15 minutes.
While soup is boiling cut the baguette in half lengthwise and then in pieces about the size of the bowl you will be serving the soup in.
Top the baguette pieces with swiss cheese and toast the baguettes on a cookie sheet in the oven until the cheese melts.
Serve soup in bowls with baguette sitting on top.
