Fresh Apple Cake
2 c sugar
2 1/2 c flour
1 c oil
2 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 tsp cinnamon
1 tsp salt
3 c diced apples (can leave peel on)
1 c chopped walnuts
1 (6 oz) bag butterscotch morsels
Mix all ingredients except apples, nuts & morsels; fold in apples and nuts.
Pour into greased 9x13 pan.
Spring morsels over top of cake.
Bake at 350 degrees for 40 minutes.
Better if covered with saran wrap and served the next day.
If you can't wait, it's good served warm with a dip of vanilla ice cream
