FRESH APPLE CAKE
Fresh Apple Cake

INGREDIENTS
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 4 eggs
- 1 tsp. pure vanilla
- 2 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. salt
- 3 cups peeled & chopped apples
- 1 cup chopped Pecans
- Caramel Glaze
DIRECTIONS
Preheat oven to 350*F. Grease & flour a 12 cup tube pan.
In large bowl, beat sugar & oil at medium speed with an electric mixer until combined. Add egss, one at a time, beating well after each addition. Beat in vanilla
In medium bowl, combine flour, baking powder, cinnamon & salt; sift. Gradually add to sugar mixture, beating until combined. Stir in apples & pecans
Pour into prepared pan; bake for 1 hour & 10 minutes or until wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes. Remove from pan & cool completely on wire rack. Spoon warm Caramel Glaze over cake
