Fresh Broccoli Mandarin Salad

1 egg plus 1 egg yolk, lightly beaten
1/2 cup sugar
1 1/2 teaspoons cornstarch
1 teaspoon dry mustard
1/4 cup vinegar
1/4 cup water
3 tablespoons butter, softened
1/2 cup mayonnaise
4 cups fresh broccoli florets, 1" cuts
1/2 cup golden raisins
6 bacon strips, cooked and crumbled
2 cups sliced fresh mushrooms
1/2 cup slivered almonds, toasted
1 11 oz can mandarin oranges, drained
1/2 medium red onion, sliced in rings

In the top of a double boiler, whisk together egg, tolk, sugar, cornstarch and mustard. Combine vinegar and water, slowly whisk into the egg mixture. Place over hot water and cook, stirring constantly, until thickened. Remove from the heat; stir in butter and mayonaise. Chill. Just before serving, combine remaining ingredients in a large salad bowl. Add dressing and toss to coat. Refrigerate any leftovers.
