Fresh Corn Fritters
1 cup fresh corn kernels
1 slice bacon, cooked until crisp then crumbled
2 eggs, beaten
1/4 cup flour
1 Tbsp green onion, chopped very fine
1/2 tsp salt
1/8 tsp pepper
Preheat the oil in the deep fryer.
Combine the corn with the eggs, flour, salt, pepper, crumbled bacon
and green onion in a medium bowl. Carefully drop by the tablespoonful
into the hot oil. Fry until golden (1 1/2 minutes). Drain. Serve hot.
