FRESH CUCUMBER AND MINT SOUP

Ingredients

  • 1 Lebanese cucumber or 1/4 cucumber, peeled and chopped
  • 3 tbsp Greek-style yogurt
  • A handful fresh mint leaves
  • 1 tbsp olive oil
  • Juice of half a lemon
  • Salt & pepper to taste

Directions

  • Throw all ingredients in a blender and whizz until it reaches the desired consistency

Notes

I saw a billboard advertising for a new cucumber & mint soup the other day, so I decided to try and do it myself. Super easy and delicious - perfect for a hot summer day!
