Fresh Mango Pie
1 cup orange juice
2 Tablespoons cornstarch
1/4 cup plus 1 tablespoon sugar, divided
1 Tablespoon lemon juice
1 1/2 cups finely chopped mango (1 to 2 mangoes)
1 (9-inch)cookie crumb pie shell
1 cup whipping cream
mango for topping, if you like
In small saucepan, whisk together orange juice and cornstarch until cornstarch is dissolved. Whisk in 1/4 cup of the sugar and lemon juice. Cook over medium heat 5 minutes or until clear and thick, stirring constantly.
Place mango in pie shell. Pour warm orange juice mixture over mango. Cool 30 minutes or until room temperature.
In medium bowl, beat cream and remaining 1 tablespoon sugar at medium-high speed until firm but not stiff peaks form. Spread over mango mixture. Top with sliced mango, if you want. Refrigerate at least 2 hours or until thoroughly chilled.
