- 3 ½ c. sifted flour
- 3 c. sugar
- 2 t. baking soda
- 1 t. cinnamon
- 1 t. nutmeg
- 1 ½ t. salt
- 4 eggs, well beaten
- 1 c. oil
- ⅔ c. water
- 2 c. mashed cooked pumpkin (fresh), but you may substitute 1 can packed pumpkin.
- Walnut halves
- 1. Preheat oven to 350 degrees. Sift together flour, sugar, soda, cinnamon, nutmeg and salt.
- 2. Combine eggs, oil, water, and pumpkin and mix well. Stir into dry ingredients.
- 3. Turn into 2 greased 8”x4” loaf pans and top with a few walnut halves. Bake 1 hour, or until a toothpick comes out clean. Cool before slicing. Makes 2 loaves.
NotesThis is my favorite pumpkin bread. You can use canned pumpkin, but it tastes amazing with fresh, cooked pumpkin.
