FRESH PUMPKIN BREAD

Ingredients

  • 3 ½ c. sifted flour
  • 3 c. sugar
  • 2 t. baking soda
  • 1 t. cinnamon
  • 1 t. nutmeg
  • 1 ½ t. salt
  • 4 eggs, well beaten
  • 1 c. oil
  • ⅔ c. water
  • 2 c. mashed cooked pumpkin (fresh), but you may substitute 1 can packed pumpkin.
  • Walnut halves

Directions

  • 1. Preheat oven to 350 degrees. Sift together flour, sugar, soda, cinnamon, nutmeg and salt.
  • 2. Combine eggs, oil, water, and pumpkin and mix well. Stir into dry ingredients.
  • 3. Turn into 2 greased 8”x4” loaf pans and top with a few walnut halves. Bake 1 hour, or until a toothpick comes out clean. Cool before slicing. Makes 2 loaves.

Notes

This is my favorite pumpkin bread. You can use canned pumpkin, but it tastes amazing with fresh, cooked pumpkin.
