Fresh Tomato and Egg Soup

Ingredients

5 cups water
2 vegetable bouillon cubes
5 roma tomatoes diced
1/2 red bell peppers diced
1 onion chopped
4 garlic cloves minced
dash of olive oil
4 whole eggs
4 eggs whipped
handful of mint chopped


In a pot add water and bring to boil with bouillons and then add tomatoes, bell pepper and simmer for 15 minutes.


In pan saute onion and garlic with oil then put in pot and simmer for 5 more minutes.


Increase heat to medium high and add 4 whole eggs and cook 2-3 more minutes then add the whipped eggs and stir for 1-2 minutes.


Add mint and serve.
