FRIED CARROT DUMPLINGS WITH YOGURT SAUCE AND PASTA

Ingredients

  • 2 onions
  • olive oil or other to fry in
  • 2 tsp curry powder (use your favourite)
  • 1 deci litre (dl) dried rice
  • 1 1/2 dl water
  • 1/2 tsp salt
  • freshly ground black pepper
  • 350g carrots
  • 50g white flour
  • 1 egg
  • 1 1/2 dl fresh parsley
  • stock or milk if necessary
  • 25g parmesan cheese
  • 90g white flour for dusting
  • Yogurt Sauce:
  • 1 jar of plain yogurt without any additives
  • 2 tbsp olive oil
  • 1-2 garlic cloves
  • salt and pepper to taste
  • 1 tbsp fresh mint or 1 tsp dried mint

Directions

  • Mix all ingredients well and serve with the Carrot dumplings and the Pasta.
  • Put first the Pasta on the plate, then the dumplings in the middle and a dullop of the yogurt sauce on top.
  • Enjoy

Notes

These are really easy to make and taste really good.
