Fried Okra Salad
4 ounces chopped cooked hot breakfast sausage, drained
1 tablespoon minced onion
2 tablespoon minced garlic
3/4 cup olive oil
1 tablespoons balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
Dash of crushed red pepper
Bag of your favorite salad blend
2 cups frozen breaded okra, fried
shredded cheese, sliced boiled egg, or your favorite salad topper
Place sausage in a small pot.
Add the onions and garlic and saute for 1 minute.
Add the oil and vinegar, cook for 1 minute, and remove from the heat.
Stir in the sugar, salt, and pepper.
Place a handful of salad blend in 4 bowls.
Top with cheese, egg and fried okra.
Spoon warm sausage dressing on top and serve.
Refrigerate any remaining dressing.

I had frozen breaded okra that I need to use and could not find a recipe to use it in so I came up with this with this. Use your favorite cheese on your salad. My husband wanted blue cheese and my son wanted mexican blend.
