Frijoles San Juan
10 ounces (one 16-ounce can) pinto beans, rinsed and drained
1/2 cup chunky salsa (mild, medium, or hot)
1/2 teaspoon dried minced garlic
1/2 cup +1 tablespoon (2 1/4 ounces) shredded Kraft reduced-fat Cheddar cheese
In a large bowl, slightly mash pinto beans with a potato masher or fork. Stir in salsa and garlic.
Pour mixture into a large skillet sprayed with butter-flavored cooking spray.
Cook over medium heat for 10 minutes. Add Cheddar cheese. Mix well to combine.
Lower heat and simmer for 5 minutes, stirring occasionally.
