BackstoryWhen you grow your own potatoes in the garden, but don't have a cool cellar to store them, make your own frozen hash browns. I would use my shred attachment to my kitchen aid mixer to process them. I use my blanching double boiler for processing, as it is easier to get the potatoes out of the boiling water.
- Freezer bags
- Wash and boil potatoes. Boil small potatoes 5 minutes and large potatoes 10 minutes. Cool overnight. Scrape skins if desired and shred, but don't mash up. Bag and freeze.
