- Wash and boil potatoes. Boil small potatoes 5 minutes and large potatoes 10 minutes. Cool overnight. Scrape skins if desired and shred, but don't mash up. Bag and freeze.
NotesWhen you grow your own potatoes in the garden, but don't have a cool cellar to store them, make your own frozen hash browns. I would use my shred attachment to my kitchen aid mixer to process them. I use my blanching double boiler for processing, as it is easier to get the potatoes out of the boiling water.
