Fruit Cocktail Cake

Serves 12 - 16 | Prep Time 15 minutes | Cook Time 45 - 50 minutes

Ingredients

1 1/2 cup sugar
2 eggs
1/2 cup oil (you can use extra light olive oil if you want)
2 cups flour
1/2 teaspoon salt
2 teaspoons baking soda
1 medium can fruit cocktail
small bag of coconut
Topping:
1 stick butter
3/4 cups sugar
2 teaspoon vanilla
1/2 cup evaporated milk


Beat sugar, eggs and oil together


add flour, salt, baking soda and mix well


pour in fruit cocktail including juice


mix well


pour into a greased pan and cover with coconut


Bake at 350 for 45 minutes



Topping:


put butter, 3/4 cup sugar and 1/2 can of milk into pan


boil for 1 minute


add vanilla and stir


pour over cake as soon as it comes out of the oven
