Fruit Filled Squash Rings

2 whole acorn squashes
1 16 oz can whole berry cranberry sauce
1 cup apples, chopped
1/4 cup nuts, chopped
2 teaspoons cornstarch
1 teaspoon orange peel, grated

Wash squash; pierce deeply several times with fork. Place on paper towel in microwave oven. Microwave at High 13-15 minutes or until squash feels soft and yields slightly to pressure, rotating and turning once. Let stand 15 minutes. In 1 quart casserole, mix remaining ingredients. Microwave at High for 3-6 minutes, or until thickened, stirring after half the time. Cool. Cut squash into 1 1/2" fings, discard seeds. Place rings on baking sheet and cover. Microwave at High for 4-7 minutes, or until squash is tender throughout. Place rings on serving plate and fill with cranberry sauce
