Frumenty (trahanas) soup with vegetables and sauteed lamb sweetbreads
9.1 oz frumenty with vegetables
3.5 oz dried onions-finely chopped
1.7 oz butter
9.6 tbsp olive oil
2.9 cups water
14.1 oz Lamb sweetbreads
3.2 tbsp white wine

Step 1: Heat the olive oil in a saucepan and add the onion. Cook until soft.
Step 2: Add the frumenty and water into the saucepan with the onion. Cook the soup for about 20 minutes. Add the thyme, salt and butter.
Step 3: Heat the olive oil in a nonstick frying pan and sauté the sweetbreads until tender.
Step 4: Pour the wine into the frying pan with the sweetbreads and wait 1-2 minutes for the alcohol to evaporate.
Step 5: Add the salt.
Step 6: Serve the frumenty with the sweetbreads piping hot, in deep soup plates.
