GAI MEI BAO (CHINESE BREAKFAST PASTRY)

Ingredients

  • Bread Dough
  • 1 lb of bread flour
  • 1 ½ eggs
  • 4 tsp of yeast
  • ¾ cup warm water
  • 2 tbsp milk
  • 3 tbsp oil
  • 3 ½ oz sugar
  • Filling:
  • 3 oz butter
  • 4 oz sugar
  • 1 ½ oz of coconut
  • 1 oz flour
  • 2 oz cornstarch
  • 2 tbsp milk
  • ¼ tsp vanilla extract
  • Topping:
  • 1 oz plain flour
  • 1 ½ oz soft butter
  • 1/2 oz of sugar

Directions

  • PREPARATION
  • Make dough and place in glass bowl and cover with cheesecloth. Allow dough to rise until it is in double inside (usually 4 hours) Knead out dough (do not roll!) and divide into 24 equal parts.
  • Make filling, keep them cool.
  • Assemble bun with filling making sure you seal the opening well
  • Pipe 3 thin lines of topping on each end of the dough
  • Bake at 350 F for about 25 minutes. If it is starting to get too brown turn down temperature
  • Glaze with sugar syrup well done.
