GGS RICE PUDDING
INGREDIENTS
- 1 C long grain rice
- 1 C sugar
- ½ Gallon milk
- 2 eggs
- 1 C milk
- 1 to 2 T vanilla to taste.
DIRECTIONS
Pour above ingredients into dutch oven and bring to a boil. Stir and simmer for 1 hour with lid on. Stir occasionally.
In a Separate dish, beat:
2 eggs
1 C milk
Take a little of the hot mixture out of pan and mix with egg mixture (this helps prevent curdling of the eggs.) Stir egg mixture into rice.
Add 1 to 2 T vanilla to taste.
If too thick, add a little more milk. Pour into a 13” X 9” baking dish or serving bowl. Cool. Top with Cinnamon or nutmeg.
