GREEN CHILE CORN MUFFINS

 


INGREDIENTS

  • Cooking Time: 18-20
  • Servings: 12
  • Preparation Time: 10
  • 1-1/4 C. Cornmeal
  • 2 t. Baking powder
  • 1 c. Cheddar, shredded
  • 8 oz. Corn
  • 1 c. Sour Cream
  • 4 oz. Chilies chopped
  • 1/2 c. Canola oil
  • 2-3 Eggs, lightly beaten

DIRECTIONS

Combine cornmeal and baking powder.


Add cheese, corn, sour cream & chilies.


Stir till combined.


Add oil and eggs and stir till just


combined. DO NOT OVERMIX. Batter will be very stiff.


Place batter into greased muffin cups.


Bake at 400° for 18-20 min.


Serve warm.
