GREEN CHILE CORN MUFFINS

Ingredients

  • 1-1/4 C. Cornmeal
  • 2 t. Baking powder
  • 1 c. Cheddar, shredded
  • 8 oz. Corn
  • 1 c. Sour Cream
  • 4 oz. Chilies chopped
  • 1/2 c. Canola oil
  • 2-3 Eggs, lightly beaten

Directions

  • Combine cornmeal and baking powder.
  • Add cheese, corn, sour cream & chilies.
  • Stir till combined.
  • Add oil and eggs and stir till just
  • combined. DO NOT OVERMIX. Batter will be very stiff.
  • Place batter into greased muffin cups.
  • Bake at 400° for 18-20 min.
  • Serve warm.
