GRILLED GARLIC AND HERB CHICKEN SALAD
1 -12 oz. bag CLASSICO GARLIC AND HERB EZ MARINADER
1 ½ lbs. boneless chicken breasts - halved and skin removed
1/4 C freshly squeezed lemon juice
1/4 C extra virgin olive oil
1 C snow peas - blanched just until crisp tender
1/2 C red bell pepper - julienned
1/2 C yellow bell pepper - julienned
1 lemon thinly sliced
Kosher salt and freshly ground black pepper to taste
Place the chicken in the CLASSICO GARLIC AND HERB EZ MARINADER bag.
Marinate the chicken, following the package directions.
Heat a charcoal grill and cook the chicken breasts for six (6) minutes on each side, or until just cooked through.
Cool slightly and cut diagonally in 3/8 inch thick slices.
Chill until ready to assemble the salad.
Toss the chilled chicken slices along with any reserved juices with the lemon juice, olive oil, snow peas, red and yellow bell peppers, lemon slices, salt and pepper to taste.
Taste for seasoning and serve cold or at room temperature.
