Ingredients You'll Need
soak 1 pound garbanzo beans overnight, drain and rinse
enough water to cover beans by 3 inches
2 vegetable bouillon cubes
3 carrots sliced
3 celery stalks sliced
1 red bell pepper diced
5 tomatoes chopped
5 TBSP capers
1 onion chopped
8 garlic cloves minced
dash of olive oil
small bunch parsley chopped
Directions
In pot of water boil garbanzo beans and bouillons for 5 minutes then simmer for 1 hour.
Add carrots, celery, bell pepper, tomatoes and capers to the pot.
In pan saute onion and garlic with oil and add to pot and cook another 1/2 hour or until garbanzo beans are tender.
Add parsley.
