Why I Love This Recipe

This is a traditional recipe from Costa Rica. Ticos eat that almost every day. for almost any meals, even breakfast !


Ingredients You'll Need

2 cups of rice
2 cups of cooked dried black beans. (reserve the cooking water)
1 small or medium onion finely chopped
1/2 small red pepper finely chopped
3/4 cup of fresh chopped cilantro
2 cloves of garlic, Minced
Reserved bean cooking water
4 Tbsp of oil


Directions

Heat oil in a pot over low heat.


Infuse the oil with the whole garlic and half of the onion, red pepper and cilantro for 2 or 3 minutes.


Raise the heat to medium high and saute the rice stiring constantly until light golden colored.


Add the Beans.


Cover the rice and beans with about 2 1/2 to 3 cups of the reserved bean cooking water.


Give it a quick stir, cover, reduce heat to low and cook for 20 minutes or until rice is cooked.


Add the other half of the onion, red pepper and cilantro anf fluff the rice gently with a fork.
