"Kathy’s Sweet Treats"

1 dozen small corn tortillas (street taco size)
I box (9.5 oz) Dona Maria mole (ready to serve)
2 to 3 pieces of chicken; any part of the chicken will do
4 tablespoons lard
1 small package of cojita Mexican cheese

First, in medium size pan, boil the chicken. After approximately 30 minutes, it will peel from the bone. Let cool, then set aside. When cooled, shred the chicken into small pieces.

Next, in a small frying pan, lightly spread the lard on both sides and lightly fry the tortillas. Set aside when done. In a small sauce pan, add the mole and let it simmer on medium heat for about 10 to 15 minutes, until it begins to boil, then remove from heat.

Arrange the tortillas on a platter and lightly spread the mole on top of the tortillas -- not too heavy.

Next, take a tablespoon of the shredded chicken and lightly spread onto the middle of the fried tortilla, over the mole spread. Next, lightly sprinkle the cojita cheese.

As an extra, consider offering a garnish plate on the side, with diced sweet onions or shredded lettuce or cabbage. Approximate preparation time is around 20 minutes or less, if you’re a multi-tasker.
